Introduction:
Vetkoek (meaning “fat cake” in Afrikaans) is a classic South African dish—a golden, fluffy, deep-fried dough filled with a savoury mince. With Phaphama’s nutritious soya mince, you can enjoy a healthier, protein-packed version of this beloved meal. Perfect for family dinners or gatherings, this vetkoek recipe combines comfort and nutrition in every bite!


Ingredients

For the Vetkoek:

  • 4 cups all-purpose flour
  • 2 tsp sugar
  • 2 tsp salt
  • 2 tsp instant yeast
  • 1 ½ cups warm water
  • Vegetable oil (for frying)

For the Phaphama Soya Mince Filling:

  • 1 packet Phaphama soya mince
  • 1 large onion, chopped
  • 1 green pepper, diced
  • 1-2 cloves garlic, minced
  • 1 large tomato, chopped
  • 1 tsp curry powder (optional for a bit of heat)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • 1 cup boiling water

Instructions

1. Prepare the Vetkoek Dough:

  • In a large mixing bowl, combine the flour, sugar, salt, and yeast.
  • Gradually add the warm water and mix until a soft dough forms. Knead the dough for about 8–10 minutes until smooth and elastic.
  • Cover the bowl with a cloth and let the dough rise for about 1 hour, or until it doubles in size.

2. Prepare the Phaphama Soya Mince Filling:

  • While the dough is rising, start the soya mince filling. In a bowl, add Phaphama soya mince and pour the boiling water over it. Let it sit for 5 minutes until rehydrated.
  • Heat the oil in a pan over medium heat. Add the chopped onion, green pepper, and garlic. Sauté until the onion is soft and translucent.
  • Stir in the chopped tomato and cook until it begins to break down, creating a sauce.
  • Add the Phaphama soya mince and curry powder (if using). Season with salt and pepper to taste. Let it simmer for a few minutes, allowing the flavours to meld.
  • Remove from heat and set aside.

3. Fry the Vetkoek:

  • Once the dough has risen, punch it down to release air. Divide it into small balls (about the size of a golf ball).
  • In a deep pot, heat the vegetable oil over medium heat until it’s hot enough for frying.
  • Flatten each dough ball slightly and carefully place it into the hot oil. Fry until golden brown, turning to cook both sides evenly.
  • Remove the vetkoek from the oil and drain on paper towels.

4. Assemble and Serve:

  • Slice each vetkoek open, creating a pocket. Spoon the Phaphama soya mince filling inside, and enjoy!
