Instructions
1. Sauté the Aromatics:
- In a large pan, heat the oil over medium heat. Add the chopped onion and cook until soft and translucent, about 3–4 minutes.
- Add the garlic and cook for another minute until fragrant.
2. Add the Tomatoes and Spices:
- Stir in the chopped tomato and cook until it breaks down and becomes soft, about 5 minutes.
- If you like extra spice, add cumin or curry powder at this stage, stirring to combine.
3. Incorporate Phaphama Chakalaka Mix:
- Add the Phaphama Chakalaka Mix to the pan and mix well. Let it cook for 3–4 minutes, allowing the spices to infuse with the tomatoes and onions.
4. Add the Morogo:
- Add the chopped morogo (or spinach or kale) to the pan, stirring to combine. The greens will begin to wilt as they cook.
- Pour in the vegetable broth or water and season with salt and pepper to taste. Let it simmer, covered, for about 10–15 minutes, or until the greens are tender and fully cooked.
5. Final Adjustments and Serve:
- Taste the morogo and adjust the seasoning with more salt or pepper if necessary.
- Garnish with fresh coriander or parsley and serve hot.
